Stir fry Curried Shrimp

This is a recipe meant to be cooked with an electric wok. The preparation of this dish appears easy, but timing is the important element. Small shrimp are preferable.

 

Ingredients:

1 lb. fresh small shrimp. shelled and deveined

1 tsp. salt

1 1/2 tsp. cornstarch

2 cups oil for deep-frying

1/4 cup frozen peas, blanched in boiling water 1 minute, rinsed in cold water, drained

1 tsp. sherry

1. Wash shrimp.  Change water many times until it is clear.  Dry shrimp on paper towel.

2. Combine shrimp, salt, and cornstarch in bowl.  Mix well with hand.

3. Heat oil to 400 degrees in wok.  Pour in shrimp.  Deep-fry 1 minute, or until they separate.  Scoop through strainer.  Drain and remove.

4. Reheat 2 tbsp. of oil to 400 degrees in wok.  Pour in peas.  Stir-fry for 30 seconds.  Add shrimp quickly.  Add sherry.  Stir-fry briskly at 400 degrees 30 seconds.  Serve immediately.
