Stir Fry Curried Shrimp
This is a recipe meant to be cooked with an electric wok.

Ingredients
- 1 carrot diced
- 1 cup water
- 1/4 cup frozen peas
- 1 lb fresh shrimp, shelled, deveined, cut into halves in width then into quarters
- 1 tsp salt
- 1 1/2 tsp cornstarch
- 2 cups oil for deep frying
- 1 tbsp curry paste
- 1 tbsp sherry
- 1/4 cup roasted peanuts (optional)
- 1/2 cup shallots (optional)
Cooking Directions
- Cook carrot in water until soft, about 20 minutes. Drain.
- Plunge peas into boiling water 1 minute. Drain.
- Wash shrimp thoroughly Wipe dry. Mix shrimps with salt and cornstarch.
- Heat 2 cups of oil in wok to 400 degrees. Deep-fry shrimp 1 minute until they turn pink. Drain. Remove.
- Reheat 2 tablespoons of oil in wok to 300 degrees. Put in curry paste. Stir 1 minute. Add carrot and peas.
- Pour in shrimp. Stir 1 minute at 400 degrees. Add sherry. Stir-fry 1 minute. Add peanuts, if desired.
